Features and organoleptic qualities
The silver hake has an elongated body and lives in the deep waters of the sea. The silver hake is a member of the cod family (gadidæ) but it prefers warmer waters (6-8 ºC). Its flesh is white and tender and can be prepared in many ways but particularly in court bouillon. It is better not to overcook it because its flesh tends to fall apart.
